While on Thanksgiving break, I wanted to try and put some of my favorite ingredients together and make a snack out of it. Today I am going to make air-fried sweet potatoes, with scrambled eggs, bacon, cheese, and chipotle ranch sauce. Whether you are looking for a healthy snack or a nice side dish, this is a fantastic choice.
For this recipe, all you need is sweet potatoes, eggs, bacon, chipotle ranch, cheese olive oil (or any oil you want), and seasonings of your choice. To start you want to cut up your sweet potato into little cube pieces and put them in a bowl. Preheat the air fryer to 400 degrees, Then you want to add one tablespoon of oil into the bowl, add any seasonings you would like, and mix it all together. Once the air fryer is heated up, place the sweet potatoes into the air fryer for 10-12 minutes or until it is cooked to your liking. While the potatoes are cooking you want to put three pieces of bacon in the microwave and heat it up. Once that is done throw two eggs on the stove and scramble them up. Combine the eggs potatoes and bacon on low heat and add in some chipotle ranch sauch and top it off with some shredded cheese and mix it all together. Once everything is mixed together you can enjoy it!
Once your dish is ready, serve it as a snack, or a side dish, or even add it as your meal. These ingredients pair very nicely together and give off a lot of different yummy flavors.
